In order to determine the amount payable by individual boarders, and the size of the meal portion, you need to set 'Types of payers & Price List'.
You can find these settings in the top drop-down menu:
There you can modify the original defined payer type or add your own types (a) and also define the periods for which the data is valid (b) (e.g. in case of a meal pricelist change).
